A GRACE FILLED JOURNEY • A Recipe That's Something To Taco Bout


The Herschelman family has done its fair share of eating this holiday season, and while it's on our New Year's resolution list to start eating better, we definitely enjoyed our favorites throughout the holiday season.

If you've invited our family to a carry-in holiday party, we usually come empty-handed in terms of food. We are lucky to get there with both girls and presents and we're nearly always late.

But, if by chance, it works out for us to bring something, this simple taco dip recipe is a favorite.

Before Kyle and I got together, I was looking for a recipe to make something that would go with a Mexican lasagna recipe I had. It was one I picked up years ago covering the county 4-H food demonstrations, and is excellent.

This time, I was perusing a cookbook from the Taylor Springs Fire Department when I found a taco dip recipe submitted by Mona Elam. I took a chance because it seemed so easy, but it's one we make over and over again.

With a busy lifestyle, simple is always a great start for us, and this one is no exception. Simply mix the sour cream, cream cheese and taco seasoning together. I use my Kitchenaid mixer, but that's just because it's so easy. And I find that it helps if you let the cream cheese warm up a bit. It also helps to let your husband lick the beaters, as he makes a great taste tester. Kyle said to make sure you turn the beaters off first.

I also usually buy pre-shredded lettuce because it's one less thing I have to do! Now, if only I could find someone to dice up the tomato and onion I would be all set. Sometimes I only put onion on half because Kyle doesn't like it.

But this easy dip has become our go-to recipe for trivia nights, carry-ins and it's what we plan to bring over to some friends to celebrate New Year's Eve later this week.

Taco Dip


16 ounces sour cream

16 ounces cream cheese

1 package taco seasoning

Shredded Lettuce

Diced Tomatoes

Diced Onions

Shredded Cheddar Cheese

Tortilla Chips


Mix together sour cream, cream cheese and taco seasoning. Spread onto bottom of cookie sheet. Layer with shredded lettuce, tomatoes, onions and cheddar cheese. Enjoy with your favorite tortilla chips!
