Easter Mae Eubanks, 80, of Hillsboro, died on Monday, June 1, 2026, at St. John’s Hospital in Springfield.
Funeral services will be held on Sunday, June 7, 2026, at St. James Baptist Church in Hillsboro at 2 p.m., officiated by Pastor Joe Hill. Visitation will take place from noon until the time of services.
Mrs. Eubanks was born on January 4, 1946, to Mattie Pearl Kinder in Belzoni, MS. She married Walter Eubanks and they were together until his passing on May 4, 2000.
Mrs. Eubanks spent time working for Mid-America Manufacturing in Chicago, eventually finishing her working career with Montgomery Nursing and Rehabilitation in Taylor Springs. She was a member of the St. James Baptist Church in Hillsboro, selflessly serving as a trustee, the Culinary Chairman and as a member of the Beautification Committee. She loved to cook and was well-known for her smothered pork chops and gravy. She enjoyed helping others, and she dearly loved her family.
Mrs. Eubanks is survived by her son Joseph “C.J.” (Jackie) Liddell of Hillsboro; her daughter, Everlena Eubanks of Hillsboro; three grandchildren, Jermel (Endea) Liddell, Franshandera (Derek) Owens and Jakira Terry; two great-grandchildren, Robert J. Owens and Xavier J.S. Liddell; and her beloved dog, Champ.
In addition to her husband, she was preceded in death by her mother, Mattie; and four brothers, Charles Gwin, Eugene Gwin, James Gwin and J.D. Gwin.
